One of our most special offerings, the Orkney Boreray is an absolutely unique meat. Orkney Boreray mutton comes from one of Scotland's rarest sheep breeds, descended from a "Lost Flock" rescued from the brink of extinction and the last genetic link to the extinct Scottish Dunface. Grown slowly on the salt-sprayed Orkney island pastures, the meat is sweet, faintly gamey and beautifully tender. It is an official Slow Food Presidium product, and we're proud to be its exclusive Scottish processor.
