Description
Macbeth’s wild venison fillet is a prime roasting joint. It has a gamey flavour which is milder than some other venison cuts and it just melts in the mouth. Best cooked rare to realise the full flavour and succulence of this fantastic roasting cut. Venison fillet is ideal for small gatherings and we find is best cooked rare to medium rare. All of our venison is wild and sourced from local estates.

Excellent piece of meat. It needed a bit of trimming of silver skin but I didn’t mind that at all as I’m not bad with my butchery skills . The cooking is so easy, just sear all sides in a pan and pop in the oven for 10 to 15 minutes. You have to keep it rare or it will spoil. The price was good too, in fact I’ve ordered some more.
