A side of Shetland Hogget is approximately 10kg. We will cut and pack it to your specification but usually you will get:

Shoulder – on the bone (can be rolled or diced)

Gigot (Leg) – whole on the bone (can be rolled)

Double loin chops (can be boned and rolled)

French trim rack of lamb (can be rolled or into cutlets)

Flank on the bone (can be minced)

You will get it cut as above, if you would like anything cut differently, please specify on the notes at checkout
