Whole Boreray Mutton

Boreray Mutton – A rare taste of tradition.  This rare breed mutton has a magnificent flavour, not replicated in anything else.  Grass fed for life and left to live naturally.

A whole Boreray Mutton is approximately 22kg. We will cut and pack it to your specification but usually you will get:

Shoulder – on the bone (can be boned and rolled)
Gigot (Leg) – on the bone (can be boned and rolled)
Double loin chops (can be boned and rolled as noisettes)
French trim rack (can be made into cutlets or boned and rolled into saddle)
Flank (can be minced)                         Shanks and bones if any
