Macbeth’s source their partridge from local estates in the Moray area and we supply them all year around, frozen when out of season. Traditionally roasted but can also be used in hot pots as well. Roast for 30 – 35 minutes at 180oC.
1 Partridge – 250g

Pe-heat oven to gas mark gas mark 7.Wash the partridge. Rub the skin with 15 grs of butter Place more butter in the cavities Fill cavity with chopped onion Season with salt and black pepper. Rap 2 pieces of parma ham around the bird and place the birds in a roasting tin. Roast in the oven for 30mins.Serve with a choice of seasonal vegetables.
