These chops are so tender and tasty. I hadn’t planned on cooking them so soon after purchase, but we had so enjoyed the rolled shoulder, that my partner wanted to try the chops! I stood them on end and cooked and crisped the fat, then laid them flat on the very hot griddle. Delicious.
