A butterfly leg of lamb has had the bone removed but it has not been rolled and tied. It is popular if you wish to stuff the leg and roll and tie it yourself or is very good to marinade and then BBQ. Because it has been boned out and can be layed flat on the BBQ it cooks quicker so you can keep those hungry folk at bay!
