Scotland is almost as well know for its lamb as its beef and the Moray hill farms have a high reputation for their ready supply of top quality produce. Most are bred from Blackface and Cheviot ewes crossed with the Suffolk and are fed on grass or heather in the summer supplemented usually with some turnips or kale during the winter. The majority of our lamb comes from a farm outside Grantown, Loch Gorm, which has supplied us for many years.
Given our location “new season’s” lamb is not usually available until July, but the quality is then excellent right up until the New Year. Between January and June, the meat tends to have a stronger flavour more akin to mutton and we find that this appeals to many of our customers.
